First of all, I am not a chef. I honestly don’t really like to cook, but I know my family needs to eat! In addition, my kids tastes are completely different. One likes pasta, the other wants pizza. One likes bean burritos, the other like meat tacos. Sound familiar? It makes it difficult to decide what to make for dinner, because, chances are, someone isn’t going to like it.
I stumbled across a dish that my whole family loves! When it’s easy to make, everyone likes it AND it’s healthy, that’s a huge win in my book!
Let’s Get Cooking!
Step 1: Start with the cooking diced chicken over medium heat. Use some Olive Oil to ensure it doesn’t stick. Once it’s cooked add 1 Tbsp of Soy Sauce, then set it aside. You can also add a little butter here, to give it a little more flavor. I typically put the chicken into another dish, so I can use the same pan for cooking the ‘rice’.
Step 2: Mince the garlic. If you don’t have a garlic press, you can chop it finely. However a garlic press is much easier. You can find one on Amazon for around $15. Click here to purchase your own garlic press.
Step 3: Once the garlic is minced, add 1 Tbsp of Olive Oil a medium sauce pan, over medium heat. Add the garlic and cook for 1-2 minutes, until the garlic starts to brown.
Step 4: Add the Cauliflower Crumbles and diced Water Chestnuts and cook for 10 minutes. Stirring occasionally.
Step 5: Add the beaten egg and cook for 3 minutes. Mix frequently, ensuring that the egg is cooked thoroughly.
Step 6: Add 2 Tbsp of soy sauce and cooked chicken back to the pan. We prefer to use low sodium, but regular will work as well. Stir and Serve.
